Healthy eating and arthritis

One of my passions is healthy eating. I have been paying attention to my eating since my late teens, over 30 years!

My first interest in food came about when I was crippled by Rheumatoid Arthritis at the age of 18. I was diagnosed with it when I was 12.

In the early years RA effected my knees, feet and ankles, but in time it spread to other areas of my body. This became very debilitating and I was bedridden at my worst and unable to work.

Initially I started researching diet and arthritis to see if it would help. After reading a book called “There is a cure for Arthritis” I find that eating a whole food diet that focused on fruit, vegetables, water and juices really helped.

Within weeks of adopting this type of eating and drinking much of my pain, swelling and stiffness improved dramatically. I could walk, I could see my ankles again, and my flat feet from swelling improved.

In time I was able to return to work and live a fairly normal life, despite having RA. I was able to work, get married, have children and have hobbies. Healthy eating changed my life.

Once things settled down I went on to a maintenance diet which of being a lacto ovo vegetarian. This means eating fruit, vegetables, grains, nuts, legumes, dairy and eggs. For most of my adult life I followed this.

More recently I have gone vegan. For me this was a natural progression. Now the bulk of my food intake comes fruit, vegetables, grains, nuts and seeds, legumes and instead of dairy I use soy and rice milk products.

Healthy eating changed my life. It took me from a future with not much hope for working, to one where I work in a very physical job in my early 50s.

Healthy eating started the journey to healing for my arthritis and God finished it…but that is for another post!
